Red Wine from Dried Grapes in Bag in Box – Torri Cantine

Sensory notes
Colour: Intense ruby red with delicate violet highlights, showing particular depth due to the drying of the grapes.
Nose: A rich bouquet of very ripe red fruit, sour cherries, blackberry, plum, with intense, slightly wilted floral notes of violet, carnation and rose, and a hint of sweet spices, cocoa and tobacco.
Palate: The flavours faithfully echo the nose, with jammy notes wrapped in a full-bodied, enveloping structure. The finely integrated tannins interact with a vibrant acidity, perfectly balanced by a seductive warmth and silky softness, leading to a pleasantly smooth finish that is particularly long and persistent.

Harvest
This wine is born in one of the most vocated areas of Abruzzo, from a vineyard trained to Pergola Abruzzese, at an ideal altitude to ensure a strong diurnal temperature range and excellent exposure.
It is a red wine from dried grapes, obtained using the “taglio reciso” technique, which involves partially cutting the bunch while it is still attached to the vine. In this way it no longer receives the sap flow and the drying process starts immediately. Sun and wind cause dehydration over at least 10 days, concentrating sugars, aromas and dry extract. This is followed by a manual harvest in October from certified organic farming, guaranteeing the highest healthiness of the grapes and of the future wine.

Vinification
Vinification takes place in temperature-controlled stainless steel tanks, followed by malolactic fermentation and then 2 months of maturation in concrete vats, before being filled in total absence of oxygen.

Food pairing
Served at 14–16 °C, it is perfect on many occasions and will satisfy all lovers of red wine, especially when paired with well-structured, flavourful dishes: aperitifs, starters, first courses, vegetarian dishes, red meats and medium to long-aged cheeses.
Think of game, roast pork “porchetta”, aubergine parmigiana, hard cheeses with delicate jams, but also chocolate desserts or berry tarts.
