Sparkling wine brut MOON Rosarubra

Sensory note

Colour: A brilliant straw yellow with persuasive golden reflections and a fine, long-lasting perlage.
Nose: Intense and elegant aromas, floral and fruity scents, acacia flowers, broom, peach, green apple, citrus and a delicate bread crust.
Taste: Intense freshness and considerable minerality on the palate, well balanced by considerable warmth and softness. Excellent harmony with the nose, which is accompanied by light scents of aromatic herbs, thyme and sage. A lively, fragrant and persistent finish.

Moon is produced in one of the most suitable areas of Abruzzo, from an old vineyard trained to the Guyot system, at an ideal altitude to guarantee a formidable temperature range and with a magnificent exposure.

A quality sparkling wine made from Pecorino grapes, obtained from a strictly manual harvest in the last ten days of August, from a certified biodynamic agriculture, which guarantees maximum respect for the surrounding environment.

Vinification and sparkling
A fermentation in temperature-controlled steel vats, followed by a sparkling process using the “long” Martinotti-Charmat method for a duration of no less than 10 months. This is followed by disgorgement (filtration) and then bottling in an isobaric environment.

How to pair our wine Moon, Pecorino spumante brut
A sparkling wine to be served cold, at 4-6 degrees, with aperitifs, starters, seafood, vegetarian dishes, meat and cheese. We imagine it with sushi, swordfish rolls, steamed trout, risotto with perch, vegetables and tofu skewers, fillet with pink pepper, cacio fiore from L’Aquila.
