Sensory Notes
Color: A deep straw yellow with alluring golden reflections and excellent consistency.
Nose: Good aromatic intensity, typical and true to its terroir, with scents of ripe fruits such as peach, medlar, and apricot, along with mineral and herbal notes, including mixed aromatic herbs like thyme and marjoram.
Palate: Dry on the palate, with excellent freshness and sapidity, well balanced by notable warmth and a pleasant smoothness. Good taste persistence in harmony with the aromas, a light petillant sensation, and a pleasant almond finish.
Harvest:
The unspoiled Rosarubra Oasis, nestled between the sea and the mountains of Abruzzo and surrounded by ancient trees, benefits from a magnificent temperature range thanks to its altitude between 300 and 500 meters. This is a territory entirely governed by nature, free from human interference.
A refined and extraordinary symbiotic agriculture that respects the microbiology of the soil and plants, promoting self-production and the use of indigenous mycorrhizae that enrich the soil’s microorganisms, strengthening the healthy growth of vineyards and preserving the genetic identity of our terroir.
In this medium-textured soil grows the Guyot-trained vineyard of this precious and rare line, producing a pure wine made from 100% Pecorino grapes. In addition to its excellent exposure, it is characterized by a very high planting density exceeding 6000 vines per hectare, with minimal yields around 1.15 kg per vine.
During the manual September harvest, only the best grapes are selected — the precious fruit of this biodynamic, organic, regenerative, and sustainable agriculture — guaranteeing total respect for the environment and its ecosystem, while expressing the true typicity of its terroir.
Vinification:
Vinification in temperature-controlled steel tanks with slightly overripe grapes, followed by malolactic fermentation and subsequent maturation, also in steel. Bottling takes place in total absence of oxygen, followed by a final refinement period.

A rare, refined, and long-lived wine, this Pecorino is a pleasure to keep in the cellar, as it will pleasantly surprise over the years.
For those wishing to enjoy it right away, we recommend serving it at 8–10°C in a fine white wine glass that enhances its aromas and flavors. Perfect with appetizers, starters, fish dishes, vegetarian dishes, white meats, and fresh or semi-aged cheeses. Imagine a mackerel terrine, sea bass fillets in wheat crust, mushroom scaloppine, truffled pheasant, or a young pressed Asiago cheese.
