{"id":36970,"date":"2021-10-21T00:00:00","date_gmt":"2021-10-20T22:00:00","guid":{"rendered":"https:\/\/shop.torricantine.com\/?p=36970"},"modified":"2024-06-18T15:18:46","modified_gmt":"2024-06-18T13:18:46","slug":"fettuccine-with-lamb-ragout","status":"publish","type":"post","link":"https:\/\/shop.torricantine.com\/en\/blog\/fettuccine-with-lamb-ragout\/","title":{"rendered":"Fettuccine with lamb ragout"},"content":{"rendered":"\n<p>Recipe by <a href=\"https:\/\/www.instagram.com\/elisola79\/\">Elisa Bellacomo<\/a><\/p>\n\n\n\n<p>A great Sunday classic presented in a country chic key by our food blogger friend Elisa Bellacomo. <\/p>\n\n\n\n<p>Preparation time: 1 hour + about 2 hours cooking time<\/p>\n\n\n\n<p>Difficulty: low<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Ingredients (doses for 4 people)<\/h4>\n\n\n\n<p>For the fettuccine:<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>3 medium eggs<\/li><li>300 g of flour 00<\/li><li>1 pinch of salt<\/li><\/ul>\n\n\n\n<h4 class=\"wp-block-heading\">For the meat sauce<\/h4>\n\n\n\n<ul class=\"wp-block-list\"><li>300 g boneless leg of lamb (minced or hand chopped)<\/li><li>1 onion<\/li><li>1 carrot<\/li><li>1 celery stalk<\/li><li>1 bay leaf<\/li><li>1 sprig of rosemary<\/li><li>1\/2 glass of wine<\/li><li>500 g tomato sauce<\/li><li>300 g vegetable stock<\/li><li>extra virgin olive oil to taste<\/li><li>salt and pepper to taste<\/li><\/ul>\n\n\n\n<h4 class=\"wp-block-heading\">For the decorations<\/h4>\n\n\n\n<ul class=\"wp-block-list\"><li>marjoram leaves to taste<\/li><li>edible flower petals to taste<\/li><\/ul>\n\n\n\n<h4 class=\"wp-block-heading\">Procedure<\/h4>\n\n\n\n<p>Make a well in the flour on a pastry board, place the eggs in the centre, add a pinch of salt and beat well with a fork.<\/p>\n\n\n\n<p>Incorporate the flour and as soon as it takes consistency knead by hand.<\/p>\n\n\n\n<p>Once you have a smooth, homogeneous dough, cover with cling film and leave to rest for at least half an hour.<\/p>\n\n\n\n<p class=\"has-text-align-justify\">Roll out the dough with a rolling pin on a floured pastry board (or if you prefer with a machine), obtaining a sheet 2 mm thick, form the fettuccine, rolling the sheet (lightly floured) in 4 and cut with a sharp knife, to a width of 3\/4 mm. Gently open the rolls with a knife and place them in a nest on the floured pastry board.<\/p>\n\n\n\n<p class=\"has-text-align-justify\">Now for the meat sauce: finely chop the celery, carrot and onion. Place in a saucepan with a splash of oil and fry for a few minutes.<\/p>\n\n\n\n<p>Add the meat, chopped with a knife or a meat grinder, the bay leaf and the rosemary and fry for about 10 minutes.<\/p>\n\n\n\n<p>Deglaze with wine, let it evaporate and add the tomato sauce.
