It&#8217;s beautiful and good, but also quite easy to make. That&#8217;s why we asked Silvia to make one for us in combination with Pinot Grigio from the new Torri Cantine 1967 selection. A marvel for the eyes and for the taste!<\/p>\n\n\n\n<p>Serves: 8-10 people | Preparation: 40 min |                                                                                                                    Cooking: 120 min | Difficulty: medium<\/p>\n\n\n\n<h4 class=\"wp-block-heading\" id=\"ingredients\">Ingredients<\/h4>\n\n\n\n<p>For the meringue:<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>160 gr egg whites<\/li><li>330 gr extra-fine caster sugar<\/li><li>30 gr cornstarch<\/li><li>4 gr cream of tartar<\/li><li>2 tablespoons lemon juice<\/li><\/ul>\n\n\n\n<p>To garnish:<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>250 ml fresh cream<\/li><li>1 teaspoon vanilla extract<\/li><li>300 gr cherries<\/li><\/ul>\n\n\n\n<h4 class=\"wp-block-heading\" id=\"preparation\">Preparation<\/h4>\n\n\n\n<p>Whip the egg whites with a planetary mixer or electric whips, at medium speed.<\/p>\n\n\n\n<p class=\"has-text-align-justify\">As soon as they begin to swell and become white, add the sugar in three separate batches, continuing to whisk for a couple of minutes between each addition.<\/p>\n\n\n\n<p class=\"has-text-align-justify\">When the egg whites are puffy, add the cornstarch sifted together with the cream of tartar, continue to whisk for 2-3 minutes.<\/p>\n\n\n\n<p>Now add the lemon juice and whip for another 2 minutes to make a glossy, firm meringue.\u2028<\/p>\n\n\n\n<p class=\"has-text-align-justify\">With the help of a cake pan, draw a disk of 20 cm in diameter on a sheet of baking paper, place the meringue in the center, create a central cavity and smooth the edges, bringing the meringue upward with the help of a spoon to create jagged edges.<\/p>\n\n\n\n<p class=\"has-text-align-justify\">Bake in a preheated static oven at 120\u00b0 for about 2 hours, until dry and let the Pavlova cool in the oven with the door half open.<\/p>\n\n\n\n<p>In a cold bowl, whip the cream with electric whips and incorporate the vanilla extract.\u2028<\/p>\n\n\n\n<p class=\"has-text-align-justify\">Stone the cherries and fill the meringue cavity with half, spread the whipped cream on top and decorate with the remaining cherries.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\" id=\"pairing\">Pairing<\/h4>\n\n\n\n<p class=\"has-text-align-justify\">We have decided to pair it with a white wine from the new 1967 selection, a Pinot Grigio born in Terre di Chieti from a vine cultivated with the Guyot system, in one of the most important wine areas, characterized by an invaluable temperature range and a magnificent exposure.<\/p>\n\n\n\n<p class=\"has-text-align-justify\">A magnificent pinot grigio obtained from a harvesting in the third decade of august, hand-picked grapes only, which guarantees the utmost respect for the surrounding environment.<\/p>\n\n\n\n<p>Go to <a href=\"https:\/\/shop.torricantine.com\/en\/product\/torri-1967-pinot-noire-075l\/\">Wine List<\/a>.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Pavlova is one of our favorite desserts.
