{"id":35667,"date":"2021-09-29T10:03:40","date_gmt":"2021-09-29T08:03:40","guid":{"rendered":"https:\/\/shop.torricantine.com\/?p=35667"},"modified":"2024-06-18T15:18:47","modified_gmt":"2024-06-18T13:18:47","slug":"pears-in-wine-and-custard","status":"publish","type":"post","link":"https:\/\/shop.torricantine.com\/en\/blog\/pears-in-wine-and-custard\/","title":{"rendered":"Pears in wine and custard"},"content":{"rendered":"\n<p class=\"wp-block-paragraph\">Recipe by <a href=\"https:\/\/www.instagram.com\/cortomaldestro\/\">Silvia Monopoli<\/a><\/p>\n\n\n\n<p class=\"has-text-align-justify wp-block-paragraph\">Pears in <a href=\"https:\/\/shop.torricantine.com\/en\/product\/intimo-igt-colline-pescaresi-075l\/\">Rosarubra Intimo Wine<\/a> are prepared by cooking the peeled pears in wine over a very low flame until most of the wine has evaporated, and accompanying them with a delicate vanilla custard.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Ingredients for pears in wine<\/h4>\n\n\n\n<ul class=\"wp-block-list\"><li>750 ml of Intimo Rosarubra wine<\/li><li>250 g of water<\/li><li>350 g of sugar<\/li><li>2 cinnamon sticks<\/li><li>2 star anise berries<\/li><li>2 pieces of organic orange peel<\/li><li>4 medium-hard Kaiser pears<\/li><\/ul>\n\n\n\n<h4 class=\"wp-block-heading\">Ingredients for vanilla custard<\/h4>\n\n\n\n<ul class=\"wp-block-list\"><li>300 g whole milk<\/li><li>4 yolks<\/li><li>50 g sugar<\/li><li>1 vanilla pod<\/li><\/ul>\n\n\n\n<h4 class=\"wp-block-heading\">Preparation<\/h4>\n\n\n\n<p class=\"wp-block-paragraph\">Carefully peel the pears, taking care to leave the stalk intact.<\/p>\n\n\n\n<p class=\"has-text-align-justify wp-block-paragraph\">Place them in a high-sided saucepan, pour in the<a href=\"https:\/\/shop.torricantine.com\/en\/product\/intimo-igt-colline-pescaresi-075l\/\"> Intimo Rosarubra<\/a> red wine, water, cinnamon, star anise, sugar and organic orange zest.<\/p>\n\n\n\n<p class=\"has-text-align-justify wp-block-paragraph\">Bring to the boil and cook for about 1 hour, until tender, turn off the heat and leave them to cool in the the syrup a few hours until ready to use.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Cut into the vanilla pod, removing the seeds. Pour the milk into a saucepan<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">and add the vanilla seeds, heat almost to the boil, turn off the heat and keep warm.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">In the meantime, whip the egg yolks with the sugar and pour the milk over them.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Stir for a few minutes without ever letting the cream boil.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">It\u2019s ready when it coats the spoon.
