Sensory Notes
Color: In the glass, a bright straw yellow robe with golden nuances that captivates with its brilliance.
Nose: An excellent olfactory intensity reveals fresh floral and fruity aromas, with vegetal notes of freshly cut grass. Citrus, apricot, sage, linden, and even some tropical fruits are distinguishable.
Taste: In the mouth, a pleasantly warm and attractive structure stands out, enhanced by a biting acidity and an eccentric salinity in antithesis, which balance each other. The tasting is in perfect harmony with the nose, highlighting a pleasant and persistent mineral finish.
Harvest
It comes from one of the most renowned areas of Abruzzo, from an old vineyard cultivated in pergola, at an ideal altitude ensuring a formidable thermal amplitude and a magnificent exposure.
A Pecorino obtained from a harvest in the first decade of September, rigorously manual, within the framework of certified organic farming, ensuring the utmost respect for the environment.
Winemaking
Winemaking carried out in thermo-conditioned steel tanks, followed by 4 months of aging in cement tanks, before being bottled in total absence of oxygen.
Food and Wine Pairings with our Pecorino Abruzzo DOC Bakán wine
A wine to be served chilled, between 6 and 8 degrees Celsius maximum, with appetizers, starters, fish dishes, vegetarian dishes, white meats, and fresh or medium-aged cheeses.
Think of fish crudités or skewers of seafood, tagliolini with clams and porcini mushrooms, Bavette pasta with pesto served with potatoes and green beans, roast chicken, or a beautiful mixed Abruzzo caciotta cheese.
