But what exactly does it mean to choose organic?
Without getting lost in the maze and quibbling details of rules and regulations, the European Union has enshrined, in 2012 – not without controversy- a law, which establishes the rules for organic wine production and the winemaking process.
This regulation includes a series of restrictions in some winemaking practices and adjuvants during the vinification process. As a consequence, a producer who chooses to become organic will surely have strict limitations to follow compared to a conventional producer.
When it comes to organic agriculture, the producer must keep in mind and know the whole ecosystem of the vineyard. The latter must be in perfect balance to function at its best. The growth of the vine and its production are also strictly connected to the characteristics of the land, to its exposure and to climate. As a consequence, in case one decides to choose organic farming, it is necessary that every single aspect concerning the production of wines – as they say in jargon the so-called terroir – is in perfect harmony. Needless to say that organic farming cannot be applied all the time; the first rule to be followed is to respect the inclinations of a specific area.
So, when can a wine be defined as “organic”?
Producing organic wines means to avoid the help of chemical substances – such as herbicides, fertilizers, pesticides, insecticides – and avoid using genetically modified organisms. Moreover, the organic vinification entails a limited amount of sulfites and requires using only the enological products and processes authorized by the EU regulation. A certifying organization will control and verify that the producer meets all the criteria to obtain the organic certification in three years of surveillance. Afterwards, the winery can use the organic logo to be displayed on the bottles’ label.

Ca’ Natura Passerina IGT Organic
A representative wine of the Ca’ Natura line is Passerina IGT Organic. It derives from grapes harvested by hand in a 30 years old vineyard in Controguerra (TE). Optimal exposure, perfect terroir, and organic farming techniques are everything it takes to create very high-quality wines while enhancing their characteristics.
Ca’ Natura Passerina di Torri shows a perfect straw yellow colour in the glass. Its intense and persistent bouquet expresses, on the one hand, fruity aromas of pear and passion fruit; slight citrus notes and hints of jasmine on the other. The taste is of a disarming crispness, balanced and well-bodied, slightly sapid and with a mineral streak, which gives way to an important persistence.
